Crab served with steamed potatoes and mayonnaise


Portions for 2 servings:

3lbs male crab

1TBSP of salt


2lbs steamed potatoes


Mayonnaise:

1 egg yolk

Olive oil

Lemon juice

Salt



Crab can be eaten hot or cold. We like it cold with warm potatoes.

Prepare the crab 6 hours in advance to eat it cold.

Boil a large quantity of salted water in a large pan. Put the crab in the water claws first and let boil for 20mn (25mn a bit too long). Drain the crab, let it cool and put it in the refrigerator.

Peel and cut the potatoes, place them in a steamer and cook them 25mn.

For the mayonnaise, put the egg yolk in a bowl and beat it with an electric beater. Slowly add the olive oil up to the point where the mayonnaise has a nice texture. Salt and add the lemon juice to taste.

This 100% olive oil mayonnaise has a lot of taste. You can prefer another oil or a combination of olive oil and another one (often corn oil).

If there is some crab leftover, it can be used in a salad.
